Green chutney. Fresh 2 cupscoconut or deci add green chillies 3 or 4 fresh coriander leaves half bunch qrt of onion half a teaspoon of garlic n ginger little cumin clove cinnamon powder half a teaspoon, 1 lemon juice . Little water salt n sugar to taste , grind all to gather in a liquidizer .

Poories / Purées
Purées Chapati flour 3 cups mix with water add half a teaspoon of salt make a dough , make 4-5 balls , roll it round n cut into 4, then fry it in deep oil both the side slightly brown.
Chickpeas
Chickpeas, soak it overnight or U can buy a tin already boiled, 1 onion cut n fry till golden brown add the peas add 2 tblsp of sambar masala mix it add coconut or milk 1 cup boil it for 10 mins.

Home made crisps
Microwave. 800w 9min turn half way.
Slice potatoes. Thin or thick.
Spray oil on plate. Place sliced potatoes on plate. Spray oil on potato slices.
Place in microwave. When turned brown they are done.
Remove and place in bowl with salt and vinegar. Or your own flavours. Let cool then place in airtight container.

Dal curry
Dal curry.1 cup of red dal, 1 tomatoe ( chopped,2 tblsp of fresh coriander leaves, 1 tsp of garlic n ginger paste ,1 onion chopped , half tsp of cumin n mustard seeds few curry leaves, salt to taste. Boil the dal n when cooked, add the chopped tomatoe cook till pulpy, add the coriander leaves to the dal n set aside,Fry the onion when brown add garlic , ginger paste n add cumin , mustard seeds, curry leaves n when the mustard seeds stop sputtering, pour over the dal, ( add 2 green ,chillies cut) n serve.
Fried fish or prawns
Fried Fish or Prawns.1 packet of prawns , half tsp of turmeric powder,half tsp of red chilly powder or green chilly paste ,salt to taste, 1 tblsp of lemon juice.Marinate the fish or prawns in the turmeric, chilly powder, salt n lemon juice for half an hour. Fry till brown n serve hot. ( serve 2).
Prawn chilly fry
Prawn Chilly Fry. Qrt kg prawns ( or 1 packet) 4-5 onions sliced, 2-3 green chillies ( chopped) 1 tsp ginger paste,half tsp red chilly powder, qrt tsp of turmeric powder, qrt tsp of black pepper powder,salt to taste( depen) Fry the onions till brown , add the green chillies, ginger n add powdered masalas. Lastly add the prawns n cook till dry.( this should be eaten with rice n curry.) serves 4.
Amontik or amotik
Amontik (Sour hot Curry) half kg prawns, or any other fish like kingfish, shark or kite fish .2 tbsp red chiili powder half tsp black pepper powder 1 tsp garlic n ginger paste half tsp cumin half tsp clove n cinnamon powder n mix with vinegar or tamarind juice or lemon . Fry an one onion, add the masala, 1 cup water , salt to taste n cook the fish till is done.
Sorpotel
How 2 make Sorpotel. 1kg pork meat, 2 tsp chilly powder , 1 tsp ground cumin, 1 tspground black pepper, 1 tsp garlic paste , 1 tsp ginger paste, 2 tblsp of vinegar n salt to taste.Mix all the masala powder in a little vinegar to form a paste, First boil the pork , cut into small pieces n fry in their own fat, 1 onion finely chopped , fry the onion for 5 mins, than add the masala n mix the pork add the pork water which were boiled add vine or tamarind juice or lemon to taste . Sorpotel taste better as it matures keep for a few days.( all spics cinnamon 1 tsp n few cloves powder add this to other masala mix it).

Omlette
Ingredients:
1 teaspoon of olive oil
1 teaspoon of margarine
1 teaspoon of coriander (or a few sprigs of fresh coriander)
1 teaspoon of chives (or a few sprigs of fresh chives)
1 chopped onion
3 eggs
3 cloves of garlic
a pinch of freshly ground black pepper
Heat the oil and margarine in a frying pan:
Peel and crush 3 cloves of garlic
Coriander:
Parsley:
Chives:
roughly chop
add to a mixing bowl
And whisk
Add the pepper
- when the middle is not so runny - fold over the omelet
Press down and cook for a further minute - it should be golden brown

Pick and wash some fresh coriander, parsley and chives

Add the pepper
And whisk
Pour the mixture in to the pan
wait for about 30 seconds then go round the edge with a spatula
lift a bit of the side up so that some of the mixture from the middle flows in to the pan - keep doing this around the pan:
check the middle of the omelet, make a hole, so the egg mixture hits the pan
- when the middle is not so runny - fold over the omelet
Press down and squeeze out any remaining mixture, and leave for about a minute to cook
Cut the omelet down the middle
Flip both halves over
Press down and cook for a further minute - it should be golden brown

Girem-mirem pork chop curry
Ingredients:
4 fresh pork chops
1 chopped onion
1 1/2 teaspoon garlic paste (or 5 cloves of crushed garlic)
1 teaspoon ginger paste
1 chili
1 tablespoon of Goa Vinegar OR lemon juice
1/4 teaspoon saffron powder
1 pinch salt
2 tablespoons girem-mirem powder
250 ml ( one cup) of water
GIREM-MIREM (Jeera Meera) powder dried and ground can be brought from the shops or:
1 teaspoon ground cumin (jeera) powder,
1/2 teaspoon of ground cinnamon,
1/2 teaspoon of ground turmeric
1/4 teaspoon of ground cloves,
1/4 teaspoon of ground cardamon,
1/4 teaspoon of ground pepper (meera)
5 dried ground red kashmeri chilies
It can also be made with the following:
green chilies,
coriander leaves,
cumin seeds,
peppercorns in vinegar,
ginger,
turmeric powder and
salt
Chop up 1 onion
And fry until golden brown:
add the 2 tablespoons of Girem-Mirem Powder
Add the 1/4 teaspoon of saffron powder
Add a teaspoon of Ginger paste
Add a teaspoon and a half of Garlic paste / puree
Add one chopped chili
Fry for about 3 minutes
Add the four pork chops
Mix together for 5 minutes
Add 250 ml (1 cup of water)
Add a pinch of salt
Leave to simmer on a low heat for 40 minutes:
Curry always tastes better after resting for 5 minutes, and even better the next day.
