Baileys and cookies






instructions:
  1. Using a food processor (or zip lock bag + rolling pin or meat mallet), crush the Oreo cookies into crumbles, then set aside.
  2. Place chopped semi-sweet chocolate in a small bowl. Heat milk until steaming, then pour over chocolate. Let sit for 2-3 minutes, then stir. If any chunks of chocolate remain, heat in the microwave for 30-second intervals until all the chocolate has melted. Mixture will be very liquid, like chocolate milk. Set aside and let cool to room temperature.
  3. Using a stand mixer (or hand mixer + large bowl), add in chilled heavy cream, Baileys, and powdered sugar and beat on high until stiff peaks form, about 5-7 minutes.
  4. Divide cream mixture in half. The first half of the whipped cream will be left alone and is ready to use in the parfait. The second half will be mixed with the chocolate. When ready, slowly add the chocolate mixture over this half of the whipped cream, gently (yet thoroughly) folding them together until completely mixed.
  5. To assemble the parfaits: Using a pastry bag (or just a spoon), add layers of the cream and crushed cookies as you see fit. To do this as pictured, I layered chocolate, then cream, then cookies, then cream again, then chocolate again, then cream again, and finally finish with any remaining cookie crumbles on top.
  6. Parfaits can be served immediately. If you'd like the chocolate layer to be firmer, chill parfaits for 2-3 hours before serving.
recipe notes:

* When working with the heavy whipping cream, it will whip better if it is very chilled. I like to put the heavy cream and any other liquids I'm using (such as the Baileys in this case) in the freezer for 20 minutes prior to working with them.

Vegetable soup

2Sweet potatoes 
2Garlic
2tsps Curry powder 
2 Carrots
1Parsnip
3tablesppons olive oil
1Gala Apple 
1 red Onion
2 stalks Celery 
small piece of ginger
1Litre water of vegetable stock,
300 ml semi skimmed milk
Cook in pan 20 mins and blend

Green chutney

Green chutney. Fresh 2 cupscoconut or deci  add green chillies 3 or 4 fresh coriander leaves half bunch qrt of onion half a teaspoon of garlic n ginger little cumin clove cinnamon powder half a teaspoon, 1 lemon juice . Little water salt  n sugar to taste , grind all to gather in a liquidizer .

Poories / Purées

 Purées Chapati flour  3 cups mix with water add half a teaspoon of salt make  a dough  , make 4-5 balls , roll it round n cut into 4, then fry it in deep oil both the side slightly brown.

Chickpeas

Chickpeas, soak it overnight or U can buy  a tin already boiled, 1 onion cut n fry till golden brown add the peas add 2 tblsp of sambar masala mix it add coconut  or milk 1 cup  boil it for 10 mins.

Home made crisps

Microwave. 800w 9min turn half way. 

Slice potatoes. Thin or thick. 
Spray oil on plate. Place sliced potatoes on plate. Spray oil on potato slices. 
Place in microwave. When turned brown they are done. 
Remove and place in bowl with salt and vinegar. Or your own flavours. Let cool then place in airtight container.

Dal curry

Dal curry.1 cup of red dal, 1 tomatoe ( chopped,2 tblsp  of fresh coriander leaves, 1 tsp of garlic n ginger paste ,1 onion chopped , half tsp of cumin n mustard seeds few curry leaves, salt to taste. Boil the dal n when cooked, add the chopped tomatoe  cook till pulpy, add the coriander leaves to the dal n set aside,Fry the onion  when brown add garlic , ginger paste n add cumin , mustard seeds, curry leaves n when the mustard seeds stop sputtering, pour over the dal, ( add 2 green ,chillies cut) n serve.
