Traditional meatball curry!
Ingredients:
500g mince meat ( lamb is best, but beef is fine)
3 teaspoons Garlic paste
2 teaspoons Ginger paste
1 small bunch Fresh coriander leaves
1 medium egg
2 small onions
2 teaspoons Mixed spice*
1/4 teaspoon Saffron
2 pinches of salt
3 green chillies
1 teaspoon Tomato sauce
2 tablespoons of peeled chopped tomatoes
Breadcrumbs ( 1 slice of bread blended)
Toasted breadcrumbs ( 1 slice toasted bread blended or ready made bread crumbs)
*mixed spice
Contains
Cloves 1 teaspoon
1/2 teaspoon jeera (cumin seeds)
Whole black pepper 1 teaspoon
Cinnamon powder 1 tablespoon or 4 small stick
Preparation
• Wash the mince in hot water to remove any residing blood place in a bowl
• Finely chop 1 onion add to the bowl
• add 2 teaspoons of garlic paste
• add 1 teaspoon of ginger paste
• mix with a fork
• finely chop up 1 chili, and a small bunch of coriander leaves
• mix in with the mince
• add 2 teaspoons of lemon juice and mash / mix together
• add half a teaspoon of salt
• Blend 1 slice of bread into bread crumbs
• mix in with mince
• whisk one egg slightly and add to mix
• add 3/4 or 1 teaspoon of mixed spice* and mix
• pour some breadcrumbs into a plate, you can use blended toast, or ready made breadcrumbs.
• Take a tablespoon of the mixture and using your hands, roll into a ball
• about 24 meat balls can be made with 500g of meat. place in a plate which is lightly coated with toasted or ready made bread crumbs, ready to be fried
• heat up about 5 tablespoons of vegetable oil in a frying pan
• place about 10 meatballs into the pan and leave for about 30 seconds to brown,.
• shake the pan, if they move, they are ready to be turned over,
• fry till golden brown then place on a paper towel on a plate continuing to fry the rest of the meatballs
.... Next stage....
• Finely chop 1 onion
• heat up about 2 tablespoons of vegetable oil in a pot, ( medium size as you will be adding the meatballs later)
• fry the onions for 30 seconds
• add half a teaspoon of ginger paste to the onions
• add a teaspoon of garlic paste to the onions
• chop up a bunch of coriander and 2 chilies* ( Or 1 chili if you don't want it spicy)
• add coriander and chili to the onions and stir for about a minute
• add 2 tablespoons of chopped tomatoes ( or 1 chopped fresh tomato)
• add a teaspoon of mixed spice*. And a cup of water
• add a quarter of a teaspoon of saffron
• add a pinch of salt (1/4 teaspoon)
• add a teaspoon of tomato ketchup
• add a teaspoon of lemon juice and cook for about 1 minute
• add the meatballs in to the sauce and cook for another minute, leave to stand for about 5 mins before serving with rice
